Pancetta Wrapped Chicken Legs

LIST OF INGREDIENTS

2 of chicken legs (thigh and drumstick)

5 OZ. of snow peas, cleaned

3 1/2 OZ. of sliced pancetta (bacon)

2 of garlic cloves

vinegar

thyme

extra-virgin olive oil

Salt


METHOD

  1. Preheat the oven to 375°F.

  2. Clean the chicken legs and remove the skin. Sprinkle with salt and wrap with the pancetta slices. Place chicken in an oiled baking dish. Add 2 unpeeled, crushed garlic cloves and a few sprigs of thyme. Drizzle with a little oil and bake for 25 minutes.

  3. Meanwhile, cook the snow peas in boiling salted water for 5-7 minutes. Drain and season with a little oil and vinegar and serve with the chicken.
