Spaghetti Aglio E Olio is one of the most authentic Italian pasta dishes. It can be translated as Spaghetti (with) garlic and oil. This pasta is quite humble in terms of ingredients and tastes just delicious when cooked properly. The tip is to gradually toast the garlic slices to a perfect golden-brown in the olive oil. If it's too bright, you don't get the full zest and if it's too dark it gets unpleasant.

This recipe is of Raffaella Cecchelli who runs the smallest osteria in Italy called La Tana dei Brillo Parlante in Massa Marittima. This sauce is ideal with penne, fusilli, pappardelle or rigatoni dried pasta.

Near to the border into Lazio is the small town of Cerveteri where there is a group of Etruscan tombs.
