500gms green beans
250gms chopped tomatoes
2 crushed garlic cloves
2 tbsp. extra virgin olive oil
1 tbsp. of chopped parsley
A pinch of crushed chilli pepper
Salt to taste
Wash the green beans properly with cold water and clean them by chopping off the head and tail. Then cook them for 15 mins in salted boiling water.
You can prepare tomato sauce side by side. Take a large saucepan, heat the extra virgin olive oil, add the crushed garlic and cook it until it turns golden brown.
Add tomatoes to the mixture of oil and garlic and cook for 10 more minutes on medium-high flame.
Strain the water from green beans and add them to the tomato sauce, season it with salt and pepper according to your taste and cook for 7-8 minutes.
Sprinkle the beans with chopped parsley and serve hot.
Tip 1: This dish could be used as a side to meat and fish both.
