Mint pesto is good with a variety of shapes. You can use any pasta format, from farfalle, orecchiette, fusilli to linguine or spaghetti.
Mint pesto — just like the more traditional basil-made, Genovese pesto –– is not cooked so the quality of the ingredients used in the preparation will make all the difference.

Here’s the recipe!
The recipe calls for the following ingredients:
➢ A bunch of fresh mints
➢ A clove of garlic
➢ Roasted Almonds
➢ 30gm Pecorino
➢ Extra Virgin Olive Oil
➢ Black Peppercorns
➢ Tagliatelle Pasta
Preparation
➢ In a food processor, combine the Mint leaves, Pecorino cheese, Roasted almonds, garlic cloves and olive oil. Blend until the fusion becomes creamy.
➢ Put some water in a pan and bring it to a boil. Now add some pasta to the pan.
➢ Drain the pasta when al dente.
➢ Mix the pasta and the creamy pesto in a bowl and add a spoonful of pasta water.
➢ Add some peppercorn and extra Pecorino on the top. It’s time to serve!!
