The Italian Culinary Institute for Foreigners (ICIF) is a non-profit association founded in 1991 by a group of Italian chefs of international repute, and opinion leaders in the sector for the purpose of improving and promoting greater awareness of the image of Italian cuisine and products among professionals in the food-service industries at home and abroad.
ICIF is situated in a restored medieval castle at Costigliole d’ Asti Castle, 60 km from Piemonte’s capital city, Turin. In its palatial confines, ICIF has state of the art work stations, equipped with individual stoves and ovens, an auditorium, wine and olive oil tasting classrooms, bakery, and a formal dining room. The institute also houses the National Wine Cellar, equipped with 20 multi-purpose tasting stations. Each year, significant wines in the market are added to the cellar.
Diploma Master Course for Professionals
The institute offers a 180-day ICIF Diploma Master Course for Professionals, which trains chefs in

through lectures and guided visits to production areas and food companies. The course offers 180 days of complete immersion of theory and practice, and gives each student the chance to understand the essentials of Italian cooking. The course also includes a 16-week placement in a prominent restaurant in Italy.

ICIF courses have evolved as a result of the constant interaction between students and teachers. The faculty includes the in-house instructors with years of experience, chefs of renown, guest teachers from other hotel schools, journalists and experts in culinary art, as well as management professionals.
